Apple - Pumpkin Muffins

Apple - Pumpkin Muffins One year I grew 10 pumpkins and found ways to use them.

2 cups whole wheat flour
2 teaspoon baking powder
1 teaspoon baking soda
2 teaspoon ground cinnamon
2 teaspoon ground nutmeg
2 eggs
2 cups unsweetened applesauce
1 cup pumpkin puree
1/4 cup sugar
2 tablespoon canola oil
1 teaspoon almond extract
1/2 cup nuts, chopped fine (optional)

  1. Using a medium bowl, combine flour, baking powder, baking soda, cinnamon, and nutmeg.
  2. Blend and set aside.
  3. Using a large bowl, combine eggs, applesauce, pumpkin, sugar, oil, almond, and optional nuts.
  4. Add flour mixture gradually as mixing.
  5. Mix until blended.
  6. Preheat oven to 350 dF.
  7. Prepare muffin tins for 18 muffins. Either use paper liners or non-stick (I avoid non-stick for health reasons).
  8. Fill muffin cups.
  9. Bake 25-30 minutes.
  10. Remove tins from oven and start cooling.
  11. If using non-stick, after some cooling, remove muffins and allow final cooling.
