Banana Bread

Banana Bread This recipe came from my mother. It is where I started in developing my fig bread and apple bread recipes.


3 1/2 cup whole wheat flour (can use white flour)
1/2 cup sugar
2 teaspoon baking soda
1/2 teaspoon baking powder
2 cups mashed banana
1/2 cup peanut oil
3 egg whites (or 2 whole eggs)
1/2 cup chopped pecans

  1. Combine first four dry ingredients.
  2. Combine banana, oil, egg whites and blend. Add to dry ingredients.
  3. Add nuts.
  4. Pour into loaf pans.
  5. Bake 30 min. at 325 F.
  6. Cool 10 minutes, pop out onto rack.
