Kooking with Ken - Beef with Mushrooms and Broccoli

A stir-fry. You can substitute other meat for beef.

1/2 pound flank steak (can substitute other meat)
1 Tablespoon soy sauce
2 Tablespoon oyster sauce
l teaspoon sugar
1 teaspoon sherry
1 teaspoon cornstarch
1/4 cup whole button mushrooms
1 small bunch of broccoli
2 cloves of garlic, mashed
3 Tablespoon oil
Pinch sugar
2 Tablespoon water
1/4 cup chicken broth
1 Tablespoon cornstarch
1 Tablespoon water
  1. Slant cut beef across the grain 1/8 inch wide.
  2. Marinate the beef for 15 minutes in soy sauce, oyster sauce, sugar and sherry.
  3. Peel the outside stem and stalk of the broccoli and cut the flowerettes and stalks into small pieces diagonally.
  4. Heat wok, add 1 tablespoon of oil and when the oil smokes, add garlic, mushrooms and broccoli.
  5. Toss and mix, then add a pinch of sugar and 2 tablespoons of water.
  6. Cover and let steam cook (high flame) for 2 minutes.
  7. Set aside.
  8. Reheat wok, add 2 tablespoons of oil and stir fry beef for 2 minutes until meat changes color, then return the mushrooms and broccoli to the beef.
  9. Make a well at the center of the wok, add chicken broth and gradually stir in the cornstarch and water mixture to thicken the gravy.
  10. Serve.

Makes 6 servings.
