Broccoli-Cheese Frittata

A not to difficult meal for two. It just requires two oven safe omelet pans.

10 ounce package frozen Broccoli and cheese *
* alternate
3 cups fresh broccoli chopped fine
and
4 ounces Velveeta cheese
1 cup egg substitute
1/4 cup shallot, minced
1 pinch cayenne pepper
spray cooking spray
1 tablespoon fresh dill, minced

  1. Cook frozen broccoli according to package. Break up large pieces of broccoli.
  2. or if using freash broccoli and Velveeta cheese
  3. Cook fresh broccoli until tender, add cheese and heat until melted. Stir.
  4. Pour into medium size bowl.
  5. Whisk in egg substitute and shallot.
  6. Cooking spray or other to 2 standard size omelet pans.
  7. Heat pans over medium high heat.
  8. Pour mixture into pans.
  9. Cook without stirring for 5 to 7 minutes. Bottom should be firm.
  10. Transfer pans to oven and broil on low for another 5 to 7 minutes. Top should be firm.
  11. Place an inverted serving plate over each pan and turn over and remove pan.
  12. Garnish with pieces of fresh dill.
  13. Serve.

Makes 2.
