Broccoli Casserole #1

I made this up on the spot and we were surprised how good this one turned out.

2 tablespoons butter
1/2 cup diced onion
2 cups sliced mushrooms, about 1/4 pound
1 can (10 3/4 ounce) condensed cream of mushroom soup
1 cup mayonnaise
2 eggs
1 1/2 cup grated sharp cheddar cheese
1 1/2 cup shredded Parmesan cheese
2 pounds frozen broccoli, thawed or fresh
1 can (6 ounces) French-fried onions

  1. Heat oven to 350 degrees.
  2. In a large pan, melt butter over medium heat.
  3. Add onions and mushrooms, stir frequently until onions are translucent, about 6 to 8 minutes.
  4. Remove from heat and set aside.
  5. In a large bowl, combine mushroom soup, mayonnaise, eggs, one cup cheddar cheese, one cup Parmesan cheese - set remaining cheese aside.
  6. Add broccoli and stir.
  7. Add onion/mushroom mixture and stir.
  8. Pour in a 13x9 inch backing pan.
  9. In a medium bowl, combine remaining cheese and French-fried onions to make a topping. Scatter topping evenly over broccoli mixture.
  10. Bake until bubbly and topping is golden, about 45 minutes.
  11. Cool slightly before serving.
  12. Serves 12 to 16.
