Buffalo Mac and Cheese

This is like Macaroni and Cheese, but hot.

8 ounces large elbow macaroni
3 cups cooked chicken
cup green onion, sliced
1 stalk celery, chopped
1 cup heavy cream
2 cups sharp cheddar cheese, shredded
1 cup pepper jack cheese, shredded
1 cup hot sauce
5 ounces Blue Cheese crumbles
2 tablespoon unsalted butter
cup bread crumbs

  1. Preheat oven 350 df.
  2. Cook macaroni to al dente* stage according to package instructions, cool.
  3. In a large bowl, combine macaroni, chicken, green onion, celery, heavy cream, cheddar cheese, pepper jack cheese, and hot sauce.
  4. Spread mixture in 9"x13" backing dish.
  5. Sprinkle blue cheese on top.
  6. Melt butter and combine with bread crumbs. Sprinkle over casserole.
  7. Bake uncovered 30 minutes.
  8. Broil on high for 2-3 minutes to golden brown.
  9. Serve hot.

Refrigerate leftovers.

*al dente, slightly undercooked.
