image One of many casseroles that I have developed.

3 cups cooked brown rice
2 cups spinach, chopped
1 red potato, sliced thin
1 carrot, shredded
1 cup cheddar cheese
1 cup marinated artichoke heart
1 teaspoon dill
1 can cream of mushroom
1/2 onion
1/4 cup pine nuts
1/4 cup bread crumbs
1/2 cup Swiss cheese
1/2 cup Parmesan cheese

  1. Prepare vegetables.
  2. Mix together in a 3 quart casserole, rice, spinach, potato, carrot, cheddar cheese, artichoke, dill, cream of mushroom, onion, and pine nuts.
  3. Sprinkle bread crumbs on top.
  4. Sprinkle Swiss cheese on top.
  5. Sprinkle Parmesan cheese on top.
  6. Bake 350 dF for 30 minutes.
  7. Enjoy and refrigerate leftovers.
