I just made this up one day.

1 1/2 cups brown rice
1 red bell pepper
1 yellow bell pepper
2 small red potatoes
1/2 brown onion
1 cup broccoli, chopped
1 cup spinach, chopped
1 can cream of mushroom or similar soup
4 garlic cloves
1/4 cup raw almonds, chopped
1 teaspoon mustard seed
1 teaspoon thyme
1 teaspoon turmeric
1 teaspoon marjoram
1 cup cheddar cheese (shredded)
1/4 cup Romano cheese (shredded)
1/2 cup French fried onion rings

  1. Cook rice.
  2. Mix all ingredients except cheese and onion rings and place in 3 quart casserole.
  3. Sprinkle cheese and onion rings on top.
  4. Bake at 350 for half hour.
