Chicken - Chestnut Casserole

2 cups diced cooked chicken
1/3 cup uncooked cooked rice (about 1 cup cooked)
1/4 cup diced green pepper
2 tablespoons diced red bell pepper (or pimento)
1 cup sliced water chestnuts *
1 tablespoon minced onion
3/4 cup mayonnaise
1/2 teaspoon salt
1 can cream of mushroom or cream of chicken soup
3 eggs hard cooked and diced
1 cup bread crumbs

  1. Cook rice.
  2. Mix all except eggs and bread crumbs in a bowl
  3. Stir in gently, hard cooked eggs.
  4. Put in greased casserole (9x11)
  5. Top with bread crumbs.
  6. Bake 350 for 25-30 minutes
  7. Garnish with cranberry jelly and/or canned peaches (optional)

* or substitute 1/2 cup blanched slivered almonds.
