Chicken - Onion Soup #2

2 medium onions, thin sliced
2 medium size carrots, sliced
2 stalks of celery, sliced
2 teaspoons vegetable oil
2 cans (15 ounce) chicken broth
1 cup pasta (trumpets, shells, or similar), uncooked

  1. Roast chicken until done.
  2. Prepare onions, carrots, and celery and set aside.
  3. Using a large skillet (10 or 12 inch), heat oil over medium-high heat.
  4. Add onions and cook, stirring frequently until they begin to brown.
  5. Reduce heat and continue cooking and frequently stirring until onions caramelize *.
  6. Remove from heat.
  7. In a 4 quart saucepan, heat over medium-high heat, broth, carrots, and celery until boiling.
  8. Add pasta and chicken, reduce heat to medium, and cook 10 minutes.
  9. Add onions, still quickly, and serve.

* Caramelize is a state where the liquids of the onions thicken and brown and begin to resemble caramel.

Serves 4.
