I came up with this one day when I needed something to take to a pot luck and the cupboards were bare.

1 cup (uncooked) white rice
1 can (18 oz.) New England Clam Chowder
1/4 medium red onion
1/4 teaspoon garlic powder
1 teaspoon crushed rosemary
1/3 cup bread crumbs
1 cup grated Mozzarella cheese
  1. Cook rice according to directions.
  2. Combine rice, chowder, onion and spices.
  3. Spred into an 8 inch by 8 inch pan.
  4. Sprinkle with bread crumbs.
  5. Top with cheese.
  6. Bake at 350 degrees for one half hour.
