Corn Chowder

Corn Chowder I found this complicated recipe and fixed it

3/4 pound bacon
4 cups (2 cans) corn, divided
2 tablespoons Canola oil
1/3 cup chopped onions
cup chopped celery
1/4 cup chopped red pepper
1/4 cup chopped green pepper
2 tablespoons flour
1 quart half and half
1 pound tiny potatoes

  1. Cut bacon into small pieces and plan in a large (12 inch) frying pan, cook bacon until crisp.
  2. While bacon is cooking, place half of the corn into a blender and puree' and set aside.
  3. Drain bacon and set bacon aside.
  4. Add oil to frying pan.
  5. Add onions, celery, red peppers, and green peppers to frying pan.
  6. Saute over medium heat about 2 minutes.
  7. Remove from heat and add flour. Stir.
  8. Add half and half.
  9. Add pureed corn.
  10. Heat to boiling, stirring frequently for 1 minute.
  11. Add potatoes and remaining corn and stir.
  12. Heat until hot.
  13. Stir in bacon.
  14. Serve, enjoy, refrigerate leftovers.

Serves 6.
