Cottage Salmon Bisque

This is quick to prepare and worth the trouble.

1 tablespoon butter or margarine
1 medium onion, chopped
2 tablespoon flour
2 cups liquefied non-fat dry milk or skim milk or unsweetened almond milk
2 cups (16oz. Container) cottage cheese
1 7 3/4 oz can salmon, drained
Dash liquid hot-pepper seasoning

  1. Melt butter in large saucepan.
  2. Add onions and sauté until tender.
  3. Blend in flour.
  4. Gradually stir in milk.
  5. Cook over moderate heat, stirring constantly until thickened.
  6. Stir in cottage cheese, salmon, and hot-pepper seasoning.
  7. Heat through.

Makes 4 servings.

Suggestion: Serve with parsley-buttered saltines, celery hearts, carrot sticks, or spiced applesauce.
