Couscous Pilaf with Mushrooms

Couscous Pilaf with Mushrooms Use as a side or appetizer. This was designed to serve two people, but you can just double or triple amounts to server more.

1 teaspoon olive oil
1 cup sliced button mushrooms
1/2 cup couscous
3/4 cup chicken broth
2 tablespoons fresh parsley, minced

  1. In a medium saucepan, heat oil.
  2. Add mushrooms and saute' 3 minutes.
  3. Add couscous, broth, parsley, stir and bring to a boil.
  4. Remove from heat and cover.
  5. Let stand five minutes.
  6. Fluff with a fork and serve while hot.

Make 2 servings.
