Creamy Mashed Potatoes

I'm always trying to make a better mashed potato.

4 cups chicken broth
6 medium potatoes
1/2 cup half & half
2 tablespoons butter (or margarine)
3/4 cup sour cream

  1. Cut potatoes into 1 inch cubes (can peal or leave unpealed).
  2. In a 3 quart saucepan, bring broth to boil.
  3. Add potatoes and return to boil.
  4. Cover and cook about 15 minutes.
  5. Remove potatoes and mash.
  6. Add 1/2 cup of broth, half & half, butter, sour cream.
  7. Blend and mash until smooth and mixed.
  8. Option: top with chives.
  9. Option: add crumbled cooked bacon.
