Double Squash Spaghetti

image here I made this up one day to use two squashes in the refrigerator.

1 can (14.5 oz.) Diced tomatoes
1 can (15 oz.) Tomato sauce
1 can (6 oz.) Tomato paste
1 jar (4.5 oz.) Button mushrooms
2 cups Butternut squash (uncooked)
1 teaspoon Rosemary
1 teaspoon Oregano
1 teaspoon Basil
1 teaspoon Cilantro
1 Spaghetti squash

  1. Mix all ingredients except the spaghetti squash in a 3 quart saucepan.
  2. Simmer 1 hour.
  3. Bring a large pot of water to a boil.
  4. Place spaghetti squash in pot of water, reduce heat, and cook 45 minutes.
  5. Remove spaghetti squash from pot of water, cut in half, remove seeds.
  6. Scoop out squash from shell onto plates.
  7. Cover with sauce.
  8. Top with Parmesan cheese.

Makes 4 to 6 servings.
