This is a simple recipe for Enchiladas.

1 Large burrito size flour tortilla
1 can refried beans
1 whole green chilli
1/3 cup meat (ham, tuna, chicken, turkey)
1 tablespoon onions, chopped fine
1/4 cup chopped tomatoes (optional)
1/4 cup enchilada sauce (green)
1 tablespoon onions, chopped fine
1/2 cup Monterey Jack cheese
2 tablespoon olives
2 tablespoons sour cream (optional)
  1. Spread large spoon of beans on tortilla.
  2. Pull one chilli into strips and lay on beans.
  3. Add meat and onions and optional tomatoes.
  4. Roll and set in pan.
  5. Poor enchilada sauce over rolled tortilla.
  6. Sprinkle onions over.
  7. Sprinkle shredded cheese over.
  8. Sprinkle olives over.
  9. Microwave about 2 minutes each.
  10. Add sour cream to top if desired.
