Enchilada Casserole #1

This was one of my Mother's recipies. Her recipe included muchroom soup, but I like it without. I added the optional toppings.

1 1/2 pound ground turkey
1 medium onion, shopped
19 ounces red enchilada sauce
12 corn tortillas, (taco size)
1/2 pound Monterey Jack cheese, grated
small can olives (optional)
small can whole green chilies (optional)

  1. Brown 1 1/2 lbs. ground turkey and medium onion.
  2. In a 7" x 11" over proof backing dish, layer 1/2 meat/onion, 1/2 enchilada sauce, 6 tortillas, 1/2 the cheese
  3. Repeat layers.
  4. Optional cover with olives and/or whole green chillies.
  5. Bake at 300 degrees for 45 minutes.
