Enchilada Casserole #2

One of several variations of Enchilada Casserole, a quick, simple recipe.

1 medium onion, chopped
1 1/2 pounds ground turkey
19 ounce can enchilada sauce optional chili salsa or chopped green chilies
1 can cream of mushroom soup
12 small (taco size) corn tortillas
3/4 pound Monterey Jack cheese

  1. Chop onions.
  2. Brown ground turkey and onion.
  3. Mix enchilada sauce with mushroom soup, option substitute part of enchilada sauce with chili salsa and/or chopped green chilies.
  4. Layer in a 9x13 inch over safe pan, the meat, sauce, tortillas, grated cheese.
  5. Repeat previous step.
  6. Bake at 350 degrees for 30 minutes.
