Enchilada Casserole #5

I keep devising new ways to make an Enchilada Casserole.

4 flour tortillas 8"
10 oz can red enchilada sauce
1 pound ground turkey
1 teaspoon chili powder
4 ounce non-fat sour cream
1 cup shredded pepper jack cheese
1 avocado

  1. Brown ground turkey.
  2. Mix in chili powder.
  3. In a 9x13 glass backing dish layer 2 tortillas.
  4. Pour half the enchilada sauce over the tortillas.
  5. Sprinkle half of the meat over sauce.
  6. Layer 2 more tortillas over the meat.
  7. Pour the remaining sauce over the tortillas.
  8. Sprinkle the remaining meat over the sauce.
  9. Cover meat with sour cream.
  10. Sprinkle cheese over casserole.
  11. Bake at 350 dF for a half hour.
  12. Cover with thin sliced avocado.
  13. Serve.
  14. Refrigerate leftovers.
