Kooking with Ken - Fig Bread

When I bought my first house, there was a fig tree in front. It took a while but I finally developed this recipe to use the figs from that tree. I've moved on, but maybe someday the cuttings I brought along will make more figs.

3 1/2 cup whole wheat flour
1/2 cup sugar
2 teaspoons backing soda
1/2 teaspoon backing powder
2 cups mashed figs
1/2 cup peanut oil
3 egg whites
1/2 cup chopped pecans
  1. Combine flour, sugar, backing soda, backing powder.
  2. Combine figs, oil, eggs.
  3. Combine all.
  4. Pour into loaf pans.
  5. Bake 30 minutes at 325 degrees F.
  6. Cool 10 minutes, pop out onto rack.

You can substitute mashed apples for the figs or walnuts for the pecans.
