Fried Noodles

From China

3 cups cooked fine noodles
6 dried mushrooms (Chinese, if available
1/2 pound raw shrimp, shelled and deveined
2 tablespoons soy sauce
1 tablespoon sherry
1 teaspoon minced ginger root
1 tablespoon cornstarch
5 tablespoons oil
1 cup sliced bamboo shoots
1 cup shredded cabbage
11/2 teaspoon salt

  1. Start the noodles.
  2. Soak the mushroom in hot water 20 minutes. Drain and slice.
  3. Dice the shrimp and mix with the soy sauce, sherry, ginger, and cornstarch.
  4. Heat 2 tablespoons oil in a skillet.
  5. Cook the bamboo shoots, cabbage, mushrooms, and salt 5 minutes, stirring frequently. Remove from pan.
  6. Heat 1 tablespoon oil in the same skillet; sauté the shrimp 3 minutes.
  7. Return vegetables and cook 1 minute.
  8. In a separate skillet, heat the remaining oil. Add the noodles; fry 5 minutes turn frequently.
  9. Stir in the shrimp mixture. Cook over high heat 2 minutes, stirring almost constantly.

Serves 4-6
