Fried Rice #2

Fried Rice #2 There are many variations of Fried Rice, this one came out well.

3 water
3 eggs
3 tablespoon peanut oil, divided
1 cup rice
2 teaspoon ginger, minced
1 onion, chopped
3 ounces ham or chicken, diced
4 ounces medium raw shrimp
2 tablespoon oyster flavored sauce
teaspoon sesame oil

  1. Prepare vegetables, clean shrimp, dice ham.
  2. Bring water to boil in 4 quart saucepan.
  3. Beat egg to consistent blend.
  4. In a medium frying pan, fry egg as a thin sheet.
  5. Add 1 tablespoon oil and rice to water. Cook covered for 45 minutes.
  6. Cut egg to ribbon and set aside.
  7. Heat 2 tablespoons peanut oil to wok.
  8. Saute ginger and onion about 2 minutes.
  9. Add ham or chicken and shrimp and stir-fry until done.
  10. Add rice, egg, oyster sauce, sesame oil.
  11. Stir-fry until heated through.
