Green Beans and Cheddar Cheese

This takes a little prep and only makes four medium size servings, but is worth the effort.

4 cups fresh green beans (I use 4 hands full)
1 medium onion
1 clove garlic
2 tablespoons butter or margarine
1/4 cup sour cream
2 tablespoon mayonnaise
1 cup sharp cheddar cheese
1 teaspoons paprika

  1. In a large sauce pan, place one inch of water and boil.
  2. Trim ends from beans.
  3. Place beans in a steamer basket and place over boiling water. Cover with tight-fitting lid and steam 5 to 7 minutes, until tender.
  4. Chop onion.
  5. Mince garlic.
  6. Preheat oven to 350 df.
  7. Using a large skillet, melt butter over medium heat.
  8. Add onion and garlic and cook about 5 minutes until onion is tender.
  9. Add beans.
  10. Stir in sour cream and mayonnaise and cook 3 minutes, stirring occasionally.
  11. Greased 2 quart casserole (with lid) and pour in bean mixture.
  12. Cover and bake 30 minutes.
  13. Shred cheese.
  14. Remove from over and sprinkle cheese and paprika over.
  15. Bake 5 more minutes, until cheese melts.

Serves 4.
