Ken's Chili

The name says Ken's Chili, so I guess I made this up.

1 pound Red Kidney Beans
1 pound Ground turkey
1 onion
2 8 oz. cans tomato sauce
1 6 oz. can tomato paste
1 16 oz. can diced tomato
2 4 oz. can sliced mushrooms
1/2 cucumber and/or bell pepper
1 1/2 tablespoon chili powder
2 bay leaves
1/2 teaspoon ginger
1 teaspoon oregano
1/2 teaspoon cayenne (red) pepper
1/2 teaspoon thyme
2 cloves garlic

  1. Soak beans overnight. Cook 1 1/2 hours.
  2. In large fry pan, add all ingredients.
  3. Simmer several hours, stirring occasionally.
  4. Add water if necessary.
