Ken's Killer Apple Cake

Ken's Killer Apple Cake evolved from a simpler recipe, but is much richer. Before I moved, I grew my own apples. Option is to double the frosting.

6 to 10 apples
4 egg whites
2 egg whole
1 cup sugar
1 cup peanut oil
1 teaspoon vanilla
1 cup apple juice or other juice
3 cups whole wheat flour
2 teaspoon cinnamon
2 teaspoon backing powder
1cup chopped pecans
4 ounces softened cream cheese
1/2 cube softened margarine or butter
1/2 box powered sugar
1 tablespoon lemon juice

  1. Slice apples thin and place in bottom of 9" x12" cake pan. Option to peal or leave unpealed.
  2. Beat all eggs together,
  3. add sugar, continue beating,
  4. add peanut oil, beat,
  5. add vanilla,
  6. then apple juice.
  7. Blend together flour, cinnamon, backing powder.
  8. Combine egg mixture with flour mixture, blend and
  9. add nuts.
  10. Poor over apple slices.
  11. Bake 45 min. at 325 F and cool completely.
  12. Make frosting by combining last four ingredients, spread over cooled cake.
  13. Refrigerate for one hour before serving.
