Lima Bean Soup

Lima Bean Soup Beans are very nutritious and this soup contains both beans and spinach.


1 cup dried giant lima beans
1 cup chopped red onion
1 large leak, chopped
2 cups chicken or vegetable broth
4 cups water
2 cups (packed) baby spinach leaves
4 tablespoon feta cheese

  1. In a large saucepan or small Dutch oven, add beans, onion. Leak, broth, and water.
  2. Bring to a boil, reduce heat, and simmer one hour. Keep an eye on it so it doesn't burn.
  3. Remove from heat.
  4. Transfer half the mixture into a blender and purée.
  5. Return pure'e mixture back to pot.
  6. Heat and stir frequently until heated.
  7. Add spinach and stir until wilted, 3 or 4 minutes.
  8. Serve 4, garnish with 1 tablespoon feta cheese each.
