USS Midway Steak, Cheese, and Onion Submarine

A few years back, we visited San Diego Aircraft Carrier Museum. In the galley was a cookbook for how to prepair meals for a hundred people at one time. I include some of the recipes for fun, but should your ship come in, you can now feed the crew.

20 pounds Onions, Fresh, Sliced
25 pounds Beef, Steak, Sandwich, 200 Thin Slices, Raw
1/4 cup, 1/3 teaspoon Cooking Spray, Nonstick
100 Cheese, American Sliced
100 Roll, French

  1. Lightly spray grill with non-stick cooking spray. Grill thinly sliced onions 5 to 6 miutes.
  2. Grill steak on one side 30 seconds on lightly sprayed grill at 350 d.f. Turn steaks: cover half of steaks with cheese slices. Grill steaks 30 seconds. Internal temperature must reach 145 d.f. or higher for 15 seconds.
  3. Slice rolls in half lengthwise. Place 1 steak on bottom half of each roll. Add steak with cheese on top. Add 1/3 cup grilled onions on each sandwich.
  4. Cover with top half of rool. Hold at 140 d.f. or higher for service.

Yields 100, portion 11.82 ounces. Calories: 761; Carbohydrates: 28.6 g.; Protein: 47 g.; Fat: 50.5 g.; Cholesterol: 141 mg.; Sodium: 957 mg.; Calcium 511 mg.
