Nectarine Pie

Nectarine Pie Nectarines are similar to peaches, but without the fuz. I have tree and the squirrel enjoys my entire crop.

4 nectarines, sliced thin
1/2 cup sugar
2 tablespoons flour or arrow root
1/2 teaspoon cinnamon
2 tablespoons lemon juice
1 Deep dish pie shell
1 pie cover
1 tablespoons sugar
1/2 teaspoon cinnamon

  1. Combine first five ingredients.
  2. Pour into pie crust. Cover with second crust and crimp edges.
  3. Sprinkle 1 tablespoon sugar and 1/2 teaspoon cinnamon on top.
  4. Bake 45 minutes at 350 F

You can make the crust from scratch, but I never have time for that.
