Nutty Shrimp Pasta

Not quite simple, but worth the trouble.

2 tablespoons vegetable oil
1 pound medium shrimp, shelled and cleaned *
2 teaspoons fish sauce or soy sauce
2 cups peanut sauce (see below)
1 bunch scallions
1 1/2 cup bean sprouts
1 pound pasta cooked - rice noodles
1/4 cup unsalted peanuts, chopped course
1/3 cup fresh cilantro, chopped
2 lime wedges
*Can substitute chicken for shrimp.
Peanut Sauce:
  1. 1 packet Peanut Sauce Mix
  2. 1 can coconut milk.
  3. Combine ingredients in 1 qt sauce pan.
  4. Bring to a boil, stirring constantly.
  5. Reduce heat and simmer 4 minutes, stirring occasionally.
General Directions
  1. Boil water for pasta.
  2. Prepare vegetables.
  3. In 2 qt. sauce pan, heat oil on medium heat.
  4. When hot, add shrimp.
  5. Sauté 4 minutes.
  6. Add fish sauce, peanut sauce, scallions, bean sprouts. Simmer until hot.
  7. Add pasta, toss together, stirring until heated through.
  8. Garnish with peanuts, cilantro, and lime.
  9. Serve hot.
