Penne with Broccoli and Garlic

***notes***

8 oz. penne pasta, whole wheat if available.
1 tablespoon olive oil
2 garlic, minced
4 cups chopped broccoli
2 tablespoons balsamic vinegar
2 tablespoons grated Parmesan cheese

  1. Cook penne according to package directions in large pot of rapidly boiling water.
  2. Drain and reserve cup of the water.
  3. In large skillet, heat oil over medium-high heat.
  4. Add garlic and cook one minute.
  5. Add broccoli and cook 5 minutes until tender, stirring frequently.
  6. Remove from heat and stir in vinegar.
  7. When pasta is cooked, add it and the reserved water to broccoli.
  8. Toss to combine.
  9. Spoon pasta mixture onto individual plates and top with Parmesan cheese.
