Penne, Chicken, Broccoli Mix

image A not-too-difficult pasta and chicken dish.

1 pound chicken
4 quarts water
1 tablespoon canola oil
8 ounces penne pasta (whole wheat preferred)
1/4 cup olive oil
1/2 large onion
4 cloves garlic
8 cups chopped broccoli
2 tablespoon Romano or Parmesan cheese

  1. Cook chicken.
  2. In a large pot, boil water.
  3. Chop broccoli and set aside.
  4. Chop onions and garlic and set aside.
  5. Cut chicken into one inch cubes and set aside.
  6. Add broccoli to boiling water and cook until firm yet tender.
  7. In a large skillet, heat olive oil.
  8. Add onion and garlic and cook until onion start to get tender.
  9. Add chicken to skillet and cook until chicken is cook through to an internal temperature of 165 dF and no longer pink.
  10. Transfer broccoli to frying pan, keeping the water in the pot.
  11. Return the water to a boil and add canola oil.
  12. Cook the penne for about 13 minutes.
  13. Add penne and one cup of the water to the frying pan and stir.
  14. Grate the cheese and add to mixture and mix.
  15. Serve, add extra cheese if desired.
  16. Makes about 4 servings.
