Potato Salad #1 There are hundreds of recipes for Potato Salad. Here is one of mine.

2 large russet potatoes with skin
4 stalks celery, chopped fine
1/2 onion, chopped fine
6 pieces fresh dill chopped fine
1 cup mayonnaise
1/2 cup sour cream
1 tablespoon relish
6 pices fresh dill (for garnish)

  1. Bring a large pot of water to a boil.
  2. Scrub potatoes with skin on.
  3. Reduce water to slow boil and add potatoes.
  4. Slow boil potatoes until they are soft and about to fall apart, about an hour.
  5. Prepare celery, onion, and dill and set aside.
  6. When done, remove potatoes from water, cut to small pieces, and mash course. Leave some lumps.
  7. Put all ingredients into a large bowl and mix.
  8. Sprinkle some larger pieces of dill on top for garnish.
  9. Chill until ready to enjoy.
  10. Refrigerate leftovers.
