Pumpkin and Bean Lasagna

Pumpkin and Bean Lasagna When you think of Halloween and what to do with your pumpkin, you probable think of Pumpkin Pie, but next time, try this wonderful Pumpkin and Bean Lasagna.

16 Whole Grain Lasagna Noodles
4 quarts water
4 tablespoons olive oil, divided
1 cup (about half a small) onion, chopped
2 cloves garlic, minced
1 tablespoon chili powder
2 teaspoons ground cumin
2 - 15 ounce cans black beans, rinsed and drained
1 - 15 ounce can diced tomatoes
1 cup water
2 cups chunky salsa
4 - 29 ounce can pumpkin pure
cup cilantro, chopped
cup green onions, chopped
4 cups shredded Cheddar cheese
cup shredded Mozzarella cheese

  1. Prepare all ingredients. Onion, garlic, spices, beans, cilantro, green onions, cheeses.
  2. Bring 4 quarts of water to boil. Add 2 tablespoon oil.
  3. Add lasagna noodles to boiling water one at a time, allowing each to settle.
  4. Cook uncovered for 10 minutes, stirring occasionally.
  5. Drain and rinse in cold water.
  6. Lay noodles out on cookie sheet to dry.
  7. Add 2 tablespoons oil to large skillet and heat over medium heat.
  8. Add onions and saute 5 minutes.
  9. Add garlic, chili powder, cumin, stir and cook one minute.
  10. Add black beans, tomatoes, 1 cup water and bring to a boil.
  11. Simmer 5 minutes.
  12. Preheat oven to 375 dF.
  13. Using a 9" x 13" spread cups salsa evenly over bottom.
  14. Cover with 4 noodles slightly overlapping.
  15. Spread 1/3 of the pumpkin over the noodles.
  16. Spread 1/3 of bean mixture over pumpkin.
  17. Sprinkle 1/3 of cilantro over bean mixture.
  18. Sprinkle 1/3 of green onions over bean mixture.
  19. Sprinkle 1 cup cheddar cheese on top.
  20. Repeat steps 13-19 starting with spreading salsa over noodles.
  21. Repeat step 20.
  22. Top with remaining noodles.
  23. Top with remaining salsa.
  24. Top with remaining cheddar cheese.
  25. Top with Mozzarella cheese.
  26. Cover loosely with foil and bake 45 minutes.
  27. Remove foil, increase heat to 425 dF, and bake 15 minutes.
  28. Let stand 10 minutes.
  29. Enjoy.
  30. Refrigerate leftovers.
