Pumpkin - Blueberry Cookies Pumpkin - Blueberry Cookies I found this recipe using raisins, but I prefer blueberries, so I made some adjustments.

8 ounces butter - softened
1 cup white sugar
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 cup pumpkin puree
1 cup rolled oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 cup dry blueberries
2 cup all-purpose flour

  1. Cover two cookie sheets with parchment paper.
  2. Preheat oven to 350 dF.
  3. Using a fork, blend together butter, white and brown sugar until smooth, well blended and fluffy.
  4. Add egg, vanilla, and pumpkin and blend.
  5. In a large bowl, combine oats, baking powder, cinnamon, blueberries, and flour. Mix well.
  6. Add sugar-pumpkin mix to oat-blueberry bowl and blend together.
  7. Drop onto cookie sheet, one large spoon each.
  8. Bake 12 to 15 minutes until the cookies start to brown.
  9. Remove to cooling rack.
  10. Optional sprinkle with powder sugar or frost.
  11. Enjoy. Consume leftovers.
