Pumpkin Pie

image This is an old fashion pumpkin pie, but sometimes that's all you want.

3/4 cup sugar
1 teaspoon ground cinnamon *
1/2 teaspoon ground ginger *
1/4 teaspoon ground cloves *
2 large eggs
14 oz. pumpkin puree (home made or canned)
1 can (12 fl. ounces) evaporated milk
1 unbacked 9 inch (4 cup volume) pie shells
* May substitute 1 3/4 teaspoon pumpkin pie spice
  1. Mix: sugar, cinnamon, ginger, and cloves in a small bowl.
  2. Beat eggs in large bowl.
  3. Stir in pumpkin and spices.
  4. Gradually stir in milk.
  5. Pour into pie shells.
  6. Preheat oven to 425 for 15 minutes.
  7. Reduce temperature to 350
  8. Bake 40-50 minutes or until tester comes out clean.
  9. Cool 2 hours.
