I had grown a number of pumpkins one year and wanted to use them. I developed this recipe. |
1 cup | whole wheat flour |
1 cup | white flour |
1 teaspoon | cinnamon |
1/2 teaspoon | nutmeg |
1/4 teaspoon | ginger |
1/4 teaspoon | ground cloves |
1/2 teaspoon | baking soda |
1/4 cup | sugar (optional) |
1 cup | pumpkin puree |
1 | egg |
1/4 cup | Canola oil (omit if making pancakes) |
1 3/4 cup | milk |
Makes 3 8-inch waffles. Makes about 9 pancakes, just omit the oil. |
