Rice and Nuts (Yak Pab)

I learned the original for this dish from Korea from an Asian cook book I received as a gift. Then I made adjustments. This is the receipe that introduced me to pine nuts which I now use often.

2 1/4 cup Water
1 1/2 cup Rice (I prefer brown rice)
2 tablespoon Peanut oil
3/4 cup Blanched chopped almonds
1/4 cup Pine nuts
4 tablespoon Honey
2 tablespoon Soy sauce

  1. In a saucepan, boil the water. Add rice, reduce heat, cover, and cook over low heat 25 minutes or until rice is tender and dry. Brown rice will take longer than white rice.
  2. Lightly brown the almonds and pine nuts in the oil.
  3. Add the nuts to the rice with the honey and soy sauce.
  4. Toss lightly with 2 forks.
  5. Serve in place of a vegetable.

Serves 4-6.
