Salmon Salad with Pimento and Herbs

1 can (14 oz.) red salmon, well drained, bones and skin removed
1 cup diced celery
1/4 cup minced white onion
1 jar (2 oz.) chopped pimentos, drained
2-3 Tablespoon reduced fat mayonnaise
1 Tablespoon fresh lemon juice
2 Tablespoon fresh chives or 2 tsp. dried
1 teaspoon fresh dill
3/4 teaspoon paprika (optional)
1 Tablespoon Capers (optional)
package Pita bread (optional)

  1. In medium bowl, mix salmon with celery, onion and pimentos.
  2. In small bowl, combine mayonnaise, lemon juice, chives, dill, and paprika if desired.
  3. Combine salmon mixture with mayonnaise mixture.
  4. Top with capers.
  5. Serve immediately with whole wheat pita wedges, if desired.

Makes 6 servings. Per serving: 140 calories, 9 g total fat (2 g saturated fat), 2 g carbohydrates, 14 g protein, <1 g dietary fiber, 341 mg sodium.
