Savory Broccoli Soup

Surprisingly good for no meat or spices.

1 large celery stalk, thinly sliced.
1 medium bunch broccoli, florets only, coarsely chopped.
1 medium onion, finely chopped.
1 small parsnip, peeled and sliced.
1 large russet potato, peeled and sliced.
4 cups fat-free reduced-sodium chicken broth or vegetable broth

  1. Combine all ingredients in a large sauce pan.
  2. Cover and bring to a boil over medium-high heat.
  3. Reduce heat and simmer until vegetables are tender, about 15-20 minutes.
  4. Remove from heat and let cool 10 minutes.
  5. Puree in blender until smooth.

Makes 4 servings. 105 calories. 6 g dietary fiber. 6 g protein.
