Southwest Vegetable Soup

There are a few steps here, but you get a healthy soup. There is no meat, unless you consider the chicken broth, but then substitute a vegetable broth.

6 cups chicken broth or water
1 cup water
1 14.5 ounce can diced tomatoes with juice
1 cup canned dark red kidney beans with liquid (or prepare dry the night before)
1 cup frozen yellow cut corn (or canned)
1 cup frozen cut green beans (or canned)
1 4-ounce can can diced green chilies (or course chop whole chilies)
1/2 cup diced Spanish onion
1/2 cup tomato sauce
6 corn tortillas, minced
1 1/2 teaspoon chilli powder
dash garlic powder
(below two items for garnish)
1 cup shredded Cheddar & Jack cheese - combined
1 cup crumbled corn tortilla chips

  1. Combine all ingredients except garnish in large 5 quart saucepan.
  2. Bring to a boil over high heat.
  3. Reduce heat and simmer 45 minutes to 1 hour or until soup has thickened and tortilla pieces have mostly dissolved.
  4. Prepare cheese and chips for garnish.
  5. To serve: ladle 1 1/2 cups into bowl and sprinkle heaping tablespoon of cheese mixture over and top with heaping tablespoon crumbled tortilla chips.

Makes 6 servings
