Spinach-Bean Layered Salad

3 tablespoon olive oil
1 1/2 tablespoon lemon juice
1 1/2 tablespoon rice vinegar
1/2 tablespoon mustard
6 cups baby spinach, stems removed and loosely packed - divided
1 1/2 cups cherry tomatoes, cut in half - divided
1/2 medium yellow bell pepper, seeded and chopped - divided
1/2 medium red bell pepper, seeded and chopped - divided
1 can (15 ounce) black beans, drained and rinsed - divided
1/2 cup sharp cheddar cheese, shredded - divided
1/2 medium avocado, sliced thin

  1. Using a small bowl, blend oil, lemon, vinegar, and mustard.
  2. Using a large bowl, layer half of the spinach.
  3. Add a layer of half the tomatoes.
  4. Layer half of the yellow and red peppers.
  5. Layer half of the beans.
  6. Layer half of the cheese.
  7. Repeat steps 2 - 6.
  8. Add avocado to top.
  9. Drizzle with dressing from step 1.

Serves 4

Per serving: 270 calories, 16 grams total fat (3 grams saturated fat), 24 grams carbohydrates, 12 grams protein, 10 grams dietary fiber, 470 mg sodium.
