Spinach - Tomato Quiche

Spinach - Tomato Quiche This is not too hard to make and is a nice way to get your spinach.

1 pie crust
1 tablespoon olive oil
1 bag (6 ounce) baby spinach
4 eggs
1/2 cup half-and-half
1/2 cup sour cream
1/3 cup sun-dried tomatoes, drained and chopped
2 cups Cheddar cheese, divided

  1. Coat pie shell with oil.
  2. Put spinach in a bowl and microwave on high for two minutes.
  3. While spinach is cooling, in another bowl, beat eggs.
  4. Add to eggs, half-and-half, sour cream, tomatoes.
  5. Preheat oven to 350 dF.
  6. Squeeze water out of spinach and discard.
  7. Chop spinach coarsely.
  8. Add to egg mixture, spinach and 1 1/4 cup cheese and blend.
  9. Pour into pie crust.
  10. Bake 35 minutes until golden brown.
  11. Top with remaining cheese and allow to stand 5 minutes as cheese melts.
  12. Server, enjoy, refrigerate leftovers.

Serves 6.
