Squash and Zucchini Casserole

Squash and Zucchini Casserole I found this zucchini recipe and fixed it. I simplified it and made it easier to follow.

1 pound (2 6" squash) yellow squash, sliced
1 pound (2 6" zucchini) zucchini, sliced
brown onion, diced
1 cup shredded cheddar cheese
cup flour
teaspoon baking soda
cup butter, melted
2 eggs
1/4 cup bread crumbs

  1. Prepare vegetables and melt butter.
  2. In a 3 quart saucepan, heat 1 quart water.
  3. Add squash and zucchini.
  4. Cook 15 minutes until tender.
  5. In a 3 quart casserole, mix onions, cheese, flour, baking soda, butter, and eggs.
  6. Preheat oven to 325 d F.
  7. When squash and zucchini are tender, drain and add to casserole.
  8. Mix.
  9. Sprinkle bread crumbs on top.
  10. Bake 30 minutes.
  11. Enjoy, refrigerate leftovers.

Serves 8.
