Strawberry Rhubarb Pie

I'm trying to grow my own strawberries and rhubarb, but the squirrels get the strawberries and the rhubarb isn't doing well, so I still need to buy those. The Rhubarb adds a tang to the sweetness of the strawberry.

1 9" deep dish pie shell
2 pounds (5 cups) strawberries
1 cup sugar
2 tablespoon corn starch
2 Tablespoon lemon juice
1stock rhubarb

  1. Pinch small holes in pie shell with fork and bake at 350 for 15 minutes.
  2. Set nicest third of strawberries aside. Crush remaining strawberries well.
  3. Combine cornstarch, sugar, lemon juice, and crushed strawberries. Cook over low heat until transparent.
  4. Line pie crust with nice third of strawberries.
  5. Slice and cook rhubarb 15 minutes. Put rhubarb into pie crust. Pour cooked mixture over.
  6. Cool.
  7. Top with whipped cream if desired.
