Strawberry Mousse

The Strawberry Mousse is simple to make and makes a fitting breakfast dessert.

1 cup strawberries, cut into quarters
1/2 cup low-fat ricotta cheese
1/2 cup fat-free vanilla yogurt
2 tablespoons all-fruit strawberry spread
3/4 cup fat-free frozen whipped topping, thawed
4 sprigs fresh mint (to garnish - optional)

  1. Place in a blender, strawberries, cheese, yogurt, strawberry spread.
  2. Blend for 30 seconds, stirring once or twice.
  3. Pour into a bowl and fold in whipped topping.
  4. Place into 4 bowls.
  5. Add mint to garnish.
