I learned this from a fellow docent and modified it.

1 pound ground turkey (or beef or other)
dash liquid hot pepper sauce (Tabasco)
1 pound (14 oz can) refried beans
4 ounce can diced chilies
1 pound Monterey Jack cheese, shredded
7 ounce can green enchilada sauce
2 ripe avocados, mashed (or other guacamole)
4 ounce can Olives, pitted sliced
1 bunch green onions, chopped
1-2 packages tortilla chips

  1. Brown ground meat, drain.
  2. Blend ground meat with dash of liquid hot pepper sauce.
  3. Spread refried beans on the bottom of a 9x13 inch oven-proof dish.
  4. Sprinkle meat evenly over beans.
  5. Sprinkle diced chilies over meat.
  6. Cover evenly with cheese.
  7. Cover cheese with green enchilada sauce.
  8. Bake at 400 degrees Fahrenheit for 20 t o25 minutes until thoroughly heated.
  9. Option, your choice. Cover with remaining ingredients, or offer each in separate bowls and allow guests to apply themselves as they desire.
  10. Serve with tortilla chips. I like the blue chips just because I like blue.
