Kooking with Ken - Tabouli Salad

This is a simple to prepare and healthy salad, great for pot-lucks and picnics.

1/2 cup boiling water
1 1/4 cup dry couscous
6 tablespoons olive oil
1/3 cup lemon juice
1 tomato diced
1/2 green pepper diced
1/2 onion chopped
4 tablespoons parsley
1 tablespoon mint
  1. Mix water with couscous
  2. Add olive oil and lemon juice
  3. Stir well and cover. Let stand 5 minutes.
  4. Fluff with fork.
  5. Add tomato, green pepper, onion, parsley, mint.
  6. Toss
  7. Refrigerate 15 minutes.
  8. Fluff with fork.

Serves 5
