Tabouli Salad

This is a simple to prepare and healthy salad, great for pot-lucks and picnics. It can also be spelled tabuli or tabouleh. A variation is to use a whole pepper (what do you do with the other half?) and I will sometimes use both red and green pepper for more color and flavor. You can also use more parsley. Chopping the vegetables takes the most time, once that is finished, the last few steps take just a few minutes.

1 tomato diced
1/2 green pepper diced
1/2 onion chopped
4 tablespoons parsley
1 tablespoon mint
1/2 cup boiling water
1 1/4 cup dry couscous
6 tablespoons olive oil
1/3 cup lemon juice
  1. Chop vegetables
  2. Mix water with couscous
  3. Add olive oil and lemon juice
  4. Stir well and cover. Let stand 5 minutes.
  5. Fluff with fork.
  6. Add tomato, green pepper, onion, parsley, mint.
  7. Toss
  8. Refrigerate 15 minutes.
  9. Fluff with fork.

Serves 5
