Tuna Pasta Salad

Tuna Pasta Salad This is a relatively quick and simple salad.

3 quarts water
2 tablespoon Canola oil
8 ounces Rigatoni pasta
1/2 cup chicken broth
4 tablespoon lemon juice
2 tablespoon fresh oregano, chopped
1 tablespoon extra-virgin olive
4 cloves garlic
1 (7 ounce) can water-packed solid white tuna, drained and flaked
1 cup whole black olives
1 stalk celery, chopped
1 teaspoon red pepper flakes
1/2 cup feta cheese, crumbled
16 leaves fresh basil or mint

  1. In a 4 quart saucepan, heat 3 quarts of water and a tablespoon of Canola oil to boiling.
  2. While water is coming to a boil, prepare the other ingredients.
  3. In a small bowl, combine chicken broth, lemon juice, oregano, olive oil, and garlic.
  4. When pasta is done, drain.
  5. Pour broth-oil mixture over pasta.
  6. Add tuna. Olives, celery, red pepper, and cheese.
  7. Toss to coat everything.
  8. Garnish with basil or mint leaves.

Serves 4.
