Vegetable Turkey Stew

A simple hot dish made with left-over Thanksgiving turkey.

2 quarts water
1 cup rice (uncooked)
1 tablespoon canola oil
1 small onion, chopped
1 clove garlic, minced
1 medium green bell pepper, seeded and chopped
1 can (15 ounce) diced tomatoes
2 cups cauliflower florets cut in 3/4-inch pieces
1 can (15 ounce) whole kernel corn, drained
3/4 pound cooked turkey, cut into small pieces
1/4 cup firmly packed cilantro leaves, chopped

  1. Boil water and cook rice about 45 minutes.
  2. Prepare turkey and vegetables.
  3. Sauté onion, garlic, and pepper until onion is translucent, about 4 minutes.
  4. Add tomatoes and cauliflower and cook about 4 minutes until cauliflower is tender.
  5. Add corn, rice, and turkey and cook until heated through.
  6. Add cilantro and mix.
  7. Serve.
  8. Refrigerate leftovers.

Makes 6 servings. Per serving: 224 calories, 6 grams total fat (2 grams saturated fat), 30 grams carbohydrates, 15 grams protein, 5 grams dietary fiber, 180 grams sodium.
